I might not be at home for the holidays, but I have three days of food-numbing indulgence ahead. As I put some Christmas-y music on and got into the spirit, I found myself making a royal mess in the kitchen. I figure there’s no better gift than the one that comes from the heart…or the stomach, and while I don’t excel at roast chickens and melt-in-your-mouth quiches, I can boil a mean pot of quinoa and throw together a drool-worthy dairy and gluten free dessert when needed.
And so that’s exactly what I did. I put my apron on and got to work.
It took 3 hours of chopping, melting, stirring and mixing for three dozen coffee and chocolate cupcakes to be born. I struggled with the icing, as I always do, therefore the ones with chocolate frosting are the apple of my eye. I know I shouldn’t pick favourites, but (admittedly) the cupcakes with the coconut icing look a tad shameful.
Do I give a damn though?
Of course not, because the end result has been 36 loved-up cupcakes, each one worth the cup of sorghum flour accidentally dusted on the counter, the melted chocolate in my hair, the cognac running down the crook of my arm and the 40 minutes it took to wash up and restore the kitchen to its natural state.
They were so totally worth it.
